Marching into March with Three New Recipes for Mardi Gras, St. Patricks Day and Lent


As we approach the Lenten Season, we've come up with a few recipes to cover all the bases- Mardi Gras, Saint Patrick's Day and the beginning of Lent. All three of these recipes are stand-outs. We'll tell you how to make and serve these delights with not too much fuss.

If you've been a regular user of this website, you might already know how to make two-thirds of our first recipe -one worthy of Mardi Gras: our Seven Layer Homemade Lasagna with Lamb Ragu. This lasagna is to die for and you should already know how to make most of it--Three of my favorite "basics!"

The Lamb Ragu is an old favorite of mine and already posted on the website. It's easy to make and the ragu can be made in advance and you could do what I do, -Make a generous amount a day or two in advance, serve part of it with pasta the first day and then another time, using what's left for the "grand" lasagna. This lasagna also uses a Basamella Sauce -also already posted on the website.

Seven-layer Homemade Lasagna with Lamb Ragu is to die for and if you already know how to make most of it.
Our Basamella Sauce is one of the basics of classical Italian cooking, using just milk, butter and a little flour. Once you make a "white sauce" like this, you'll never settle for the glop that most unenlightened restaurants serve you. We learned this technique when we went to cooking school in Bologna, Italy.

The only new twist to this recipe is the fresh seven-layer egg pasta. The pasta pasta recipes, Fresh Egg Pasta by Hand, Fresh Egg Pasta by Machine are already posted as well. We'll tell you how to put all these components together into a gourmet's delight! It VERY MUCH worth the trouble and worthy for a Mardi Gras meal celebration!

The week after Mardi Gras, is Saint Patricks Day. Now I'm married to an Irishman that was raised in Ireland during his high school years. In Ireland, the Irish do NOT eat corned beef and cabbage for St. Patricks Day. --That's an American-Irish custom!

Our last recipe entry this month is one that even if you're following the Lenten practice of meat abstinence, you could serve for company or a party - Crab Cakes Romantic Table Style. These little cakes are so easy to throw together-especially if you already have the crab meat. And this time of year crab is at its peak and its cheapest. Our recipe is so simple you can practically throw this together on a whim! We also have a very simple sauce recipe to accompany them. -So delicious!

Though it's still dreary and cold, and though food and gas bills seem to be increasing every day, if you use the seasonal fresh ingredients and the above recipes, these festive meals shouldn't set you back much -so check them out and enjoy this pre-Easter season in style!
