Mud Pie is an ice cream dessert, frozen overnight and then cut into pie pieces and served with some Whipped Cream topped with roasted sliced almonds. OH MY God!!! Another reason to celebrate hot-weather!!!

Let's Celebrate July With Some Fun Fare!


July is here with all its glory! - Hot beach weather-Fireworks-County Fairs-Picnics and Barbecues and cravings for cold desserts. We'll try to satisfy your food fancies with a few new recipes.

It's hard to believe, but it's almost mid-summer! As it warms up and the days go by faster, it continually gets harder to satisfy everyone's cravings for the "what's for dinner" question. We've got a couple summertime recipes that are as fun-to-eat as well as yummy!

Spaghetti with Pepperoni and Tomato Sauce -all you need is a good-quality stick of Pepperoni, some garlic, a good can of whole tomatoes, a little parsley and extra virgin olive oil to make a deep rich-flavored sauce.
On those days that you're running late because you stayed too long at the swimming pool or beach, I've got a recipe that's a "no-brainer" to throw together and it's one that you can have the ingredients on-hand for any emergency supper simply called Spaghetti with Pepperoni Tomato Sauce. I like to have a stick of "Boars Head" Pepperoni on hand in the fridge for anytime I'm in the mood for a little kick without much fuss. This is SO easy to throw together! All you need is a good-quality stick of Pepperoni, some garlic, a good can of whole tomatoes, a little parsley and extra virgin olive oil to make a deep rich-flavored sauce that make your guests think you toiled for a couple hours.--Hardly! You can throw this one together in a matter of minutes. The trick to make this sauce taste so good is to finely dice the pepperoni to help expedite the flavor-transfer from the pepperoni to the entire sauce. You do this simply by slicing the pepperoni link lengthwise, then quartering each lengthwise section some more and slice bite-sized pieces. While your pasta water boils, you can easily prepare the sauce. (Remember, if it gets too hot in the kitchen, you can also boil your water on the grill.)

Mini Penne with Sausage, Mushrooms and Eggs uses sausage, mushrooms and eggs on Mini- Penne pasta.
Another recipe, Mini Penne with Mushrooms, Sausage and Eggs, we have this month uses sausage, mushrooms and eggs on Mini- Penne pasta. It too is easy to throw together, but don't try this if you're running late. This is better for a milder hazier day of summer when it's not boiling outside. This is a full-bodied sauce that your men in the house will especially appreciate when you all get tired of lighter fare. This is another version of a Italian carbonara.

Our next recipe is a FUN dessert recipe: my version of the ice cream favorite Mud-Pie Romantic Table Style. I'm a sucker for anything ice cream-based.-I LOVE ice cream! It's wonderful coldness as it slides from my mouth to my throat --the sweetness of the chilled frozen cream mixed with juxtaposed flavors that surround it --But OH! do I worry about the calories! However, I rationalize this by knowing that most of the time, I'm following the About the Romantic Table’s Recipes and occasionally I can splurge a little and eat something not quite so healthy --though it's proven that chocolate and sweets are loaded with serotonin and other healthy chemicals for our nervous systems! --And that keeps us SANE!!!!

The Mud-pie starts out with a classic homemade chocolate wafer-butter crust which is then baked, cooled and then frozen. Then a thin layer of my unbelievably good homemade Dark Chocolate Hot Fudge Sauce that's been chilled is spread on top of the crust and sides.Then you freeze the pie again. Then two quarts of Coffee Ice Cream is packed onto the cold chocolate crust. Then that's frozen some more. Now for the resistance-proof "crowning glory", my homemade Dark Chocolate Hot Fudge that is chilled, then spread on top to totally cover and encase the contents of the ice cream pie. Then that very heavy ice cream pie is frozen at least overnight and then cut into pie pieces and served with some Whipped Cream topped with roasted sliced almonds. OH MY God!!! Another reason to celebrate this hot-weather month!!!

Serve Hot fudge Sauce warmed on cold ice cream or chill it for various applications. Let your imagination soar!
Our last recipe this month is for the "chocolaty-heavenly smooth confection" of my Dark Chocolate Hot Fudge Sauce. It's so easy to make-providing you're organized, because you have to work fast on the stove-and you don't want spilled hot fudge on you-or the floor! (My first experience with hot fudge happened at the tender age of four when I reached up and pulled the hot fudge pan --and hot fudge-all over me, just as my mom turned her head. I think of that almost every time I get near hot fudge! Luckily there were no scars.) You can serve this hot fudge warmed on cold ice cream or chill it for various applications. --You could also use this for chocolate fondue-if you're so inclined.--Let your imagination soar!

So there you have it-another few recipes to try and have fun with this month especially when things are so economically strained right now! It pays to stay home and enjoy our our own backyards!

If you’re fortunate enough to be able to choose your major appliances, I recommend a gas stove-top and an electric oven.

A gas stove-top is much more versatile than an electric one because it has infinite heat options.

An electric oven is better than gas because it has more even temperatures for baking and heating.
