Smashed potatoes is a rustic "manly" side dish to accompany a beef roast or a braised beef dish like Beef Pizzaiola, Central Coast Style. It is guaranteed to please the meat and potato crowd! The taste is surprisingly complex, combining the taste of baked potatoes, roast potatoes and hash browns all in the same dish!
The most important thing is to use a good, small boiling type potato like Red potatoes or Dutch Gold. Also, keep the potatoes on the smallish size. This allows the flavors to combine more evenly.
Preparation time: 30 minutesCooking time: 40 minutes
3 pounds Small Boiling Potatoes like Red or Dutch Gold , 2'' diameter
1/4 pound Uncured Apple Smoked Bacon , diced
1/2 teaspoons Dried Thyme , or to taste
Fresh Ground Black Pepper
1 Large onion , thinly sliced and segments separated
2 Tablespoons Extra Virgin Olive Oil
Grated Parmesan Cheese
1 Preheat the oven to 350F
2 Wash the potatoes and clean off any damaged areas, but keep the potatoes unpeeled and whole.
3 Parboil the potatoes until just tender, about 20 minutes. Remove and drain.
4 While the potatoes are cooking, in a saute pan large enough to hold the sliced onion, add the bacon and saute over medium heat until it is browned. Add the olive oil, sliced onion, dried thyme and several grinds of black pepper. Continue to saute the onion until it is golden brown and sweet.
5 Spread the bottom of a 19 x 11 inch baking pan or one large enough to hold the potatoes with 1/2 of the onion bacon mixture.
6 Take each potato, cut a shallow "X" into the top, and with a pan or small cutting board, press down and squash it. Press just enough to "mushroom" it out, but not cause it to break completely apart and place it in the pan. Continue until the potatoes completely fill the pan in a single layer.
7 Spread the remaining 1/2 of the onion mixture on top of the potatoes. Grate Parmesan cheese on top and place in a 350F oven to bake for 30 to 40 minutes, or until the potatoes are well browned on top.
