Grilled Portobella Mushroom and Vegetable Sandwich

Our grilled Portobella mushroom and vegetable sandwich with goat cheese and a "killer" of a chipotle aioli sauce is SO delicious and as filling as a large hamburger. It's so easy to assemble and put together providing you have access to some nice produce and a grill.

For this sandwich, we start with a nicely baked Kaiser roll, lightly grill it and top it with a grilled portobella mushroom, caramelized white onions, red and green peppers and eggplant. Then spread the inside of the bun bottom with goat cheese and the inside of the top with a generous dollop of our yummy chipotle aioli sauce.

Oh is this good! - One of the best things about summer! Be sure to offer your guests more than one napkin, as this sandwich tends to be slightly messy. But GOOD messy! ©2018, Grilled Portobella Mushroom and Vegetable Sandwich

Chili Chipotle Aioli
4 Kaiser Rolls
4 ounces Goat Cheese
Extra Virgin Olive Oil
1 medium White Onion , sliced
2 medium Red Bell Peppers , sliced
1 medium Green Bell Pepper , sliced
4 large Portobella Mushrooms
1 medium Eggplant sliced 1/4 thick
Salt and Pepper , to taste.

Preparation Directions.

1 Preheat your grill to medium, and set the goat cheese out to warm up a bit so it will spread easier.

2 Slice the kaiser rolls in half, and lightly toast the insides on the hot grill.

3 Toss the sliced onion and red peppers with a little extra virgin olive oil and cook in a skillet on the hot grill or directly on the hot grill if you prefer. Cook until until the onion is golden and the peppers soft and sweet.

4 Remove the stems and brush portobella mushrooms and brush off any debris. Brush the the eggplant slices and portobella mushrooms lightly with the extra virgin olive oil and lightly salt and pepper. Place on the hot grill and cook turning once until the mushrooms are moist and soft and the eggplant is slightly browned.

5 How you stack the vegetables is strictly to your preference. but here is how we like to do it: When all the vegetables are cooked, spread the bottom half of the kaiser roll with the goat cheese. Place the portobella mushroom on top of that and spread a good dollop of the chipotle aioli Stack the grilled peppers and onions on top, then a slice of eggplant.

6 Finally, spread a good dollop of the chipotle aioli or goat cheese as you prefer on the top kaiser roll half, and place on top of the sandwich stack to finish the sandwich.

Wine and Food Pairing and Serving Suggestions.

The garlicky-smoky flavor of the chipotle aioli will pair very well with a young red wine like a Syrah or a Sangiovese.

It will pair equally well with a dry white wine with a bit of acidity, like Pinot Grigio
