Chili Chipotle Aioli

Chili Chipotle Aioli is not a true aioli, but actually more of a flavored mayonnaise --but who is quibbling this is a great sauce for anything grilled. The key ingredient is the chili chipotle. Chili Chipotle is a smoked pepper usually canned in adobo sauce. Combined with mayonnaise, fresh garlic and a little fresh lemon juice it creates the perfect topping for a Grilled Portobella Mushroom and Vegetable Sandwich.

You can vary the amount of chili chipotle pepper and garlic to taste. Just remember a lot of the heat of a chili pepper in in its seeds, so remove the seeds if you want to tone down the hotness of the chili without losing the smokiness of the chipotle pepper.

Ingredients.

1 cup Mayonnaise
1 clove Garlic , minced
1 medium Chile Chipotle , seeded and chopped
1 teaspoons Fresh Lemon Juice


Preparation Directions.

Makes 1 Cup

1 Combine the minced garlic, chopped and seeded chili chipotle and lemon juice in a food processor and pulse a few seconds.

2 Add the mayonnaise and pulse a few seconds more to evenly mix all the ingredients. Taste and add a little more chili or garlic to taste.


Wine and Food Pairing and Serving Suggestions.

This is great sauce for grilled meats and vegetable sandwiches - especially when serving with a robust red wine like a young Zinfandel.

Frying high fat meats

You can cut down on the calories of high-fat meats, by just adding a little water (instead of adding oil) to your frying pan until the meat's fat starts releasing and lubricating the pan, then cook with the frying pan covered. If you want a crispy coating, you uncover the pan or cook with the lid partially ajar.
