Chili Chipotle Aioli

©2017 TheRomanticTable.com
Chili Chipotle Aioli is not a true aioli, but actually more of a flavored mayonnaise --but who is quibbling this is a great sauce for anything grilled. The key ingredient is the chili chipotle. Chili Chipotle is a smoked pepper usually canned in adobo sauce. Combined with mayonnaise, fresh garlic and a little fresh lemon juice it creates the perfect topping for a Grilled Portobella Mushroom and Vegetable Sandwich.

You can vary the amount of chili chipotle pepper and garlic to taste. Just remember a lot of the heat of a chili pepper in in its seeds, so remove the seeds if you want to tone down the hotness of the chili without losing the smokiness of the chipotle pepper.

Wine and Food Pairing and Serving Suggestions.

This is great sauce for grilled meats and vegetable sandwiches - especially when serving with a robust red wine like a young Zinfandel.

Use A Pasta Pot for Pasta

If you like pasta and are planning on having it often, I recommend getting a pasta pot.

After trying different sets, the best one Iíve found was the original, least expensive one. Itís a stainless steel pot with separate built-in pasta basket. It also comes with a vegetable steamer. Something like it is available on the Internet for about $40.00. and at several local supermarkets as low as $30.00.

You donít need to have a real heavy pan---otherwise youíre going to waste all your time heating the pan instead of getting it to boil quickly. Don't worry about hot spots since all youíre going to be doing with it is boiling water.
