Caesar Salad

Caesar Salad is a perennial favorite Romaine Lettuce salad since it was first invented by the early 1920s. But most people are mystified by the preparation involved. Well have we got a surprise for you! We've come up with an easy Caesar Salad with a fresh Lemon Vinaigrette Caesar Salad dressing that will only take minutes to prepare. And it's SO-O good!

The true Caesar Salad does NOT have anchovies in it. Rather, the anchovy flavor comes from a few drops of Worcestershire Sauce. So what you start with is our fresh Lemon Vinaigrette, add a few drops Worcestershire Sauce, mix in a couple scant teaspoons of REAL mayonnaise (to substitute for the raw egg), then toss with some hearts of Romaine lettuce, add a little shredded Parmesan cheese and top with croutons and you'll be in "Salad heaven!"

2 small cloves garlic , crushed
3 to 5 Tablespoons fresh lemon juice
1 Tablespoons white wine vinegar
1/2 teaspoons dry mustard
1/3 to 1/2 cup Extra-virgin olive oil
Pinch of salt
1/2 teaspoons Italian seasoning
Freshly ground black pepper
7 to 12 Drops Worcestershire sauce
2 teaspoons (Scant) REAL Mayonnaise
18 to 24 ounces Hearts of Romaine , rinsed and blotted dry
1 to 1-1/2 cups Parmesan cheese , grated
Garlicky Croutons

Preparation Directions.

1 Pulverize the crushed garlic in a mortar and pestle with scant one-eighth teaspoon salt. Mash the garlic until it becomes almost liquid paste. Transfer to a glass measuring cup. Mix in the lemon juice and vinegar. Add the dry mustard. Beat well with spoon or small whisk.

2 Gradually beat in the olive oil. Add in the Italian seasoning and a few grinds of freshly cracked black pepper. Stir well.

3 Add in the Worcestershire sauce, and mayonnaise.Whip with a fork to suspend emulsion.

4 Taste for tartness and salt. If needed, correct seasoning by adding more lemon juice, Worcestershire sauce.

5 If too tart you may need to add a little more olive oil.

6 In a large salad bowl, tear the romaine lettuce into large bite-sized pieces.

7 Dribble the Caesar dressing over the lettuce. Toss well to evenly distribute.

8 Add in the grated Parmesan cheese. and distribute evenly.

9 Top with garlic croutons and serve.

Any good dry white wine will go well with this salad.

No cheese on seafood please!

When serving an Italian seafood dish, unless the recipe specifically calls for cheese, grated Parmesan cheese on top is not a good idea!

The pungent taste of Parmesan is usually too strong for the delicate fish flavors.
