Baked Tomatoes

Baked Tomatoes is a sure-fire recipe even when using store-bought tomatoes. They are so easy to make! You'll want to use this recipe throughout the year, especially in the winter months --the topping ingredients are so complementary to the tomatoes, when baked the topping transforms even the blandest of winter tomatoes into a guaranteed hit with the your dinner guests. ©2017, Baked Tomatoes

4 Large Tomatoes
1 clove Garlic minced
1/2 cup Italian Parsley chopped
1 Tablespoons Fresh Oregano minced or 1/2 tsp Dried
1/4 teaspoons salt
1 cup Fresh Bread Crumbs
1 Tablespoons Extra Virgin Olive Oil

Optional Parmesan Cheese

Preparation Directions.

1 Preheat the oven to 350F.

2 Cut each tomato in half, and remove the excess seeds in each half.

3 Add the garlic, salt, parsley, oregano and bread crumbs and pulse a couple of times to mix. Add the olive oil and process for a few seconds. The bread crumb mixture should be fairly loose, but hold together when pressed.

4 Arrange the tomato halves, cut side up on a greased oven proof pan. Spoon the bread crumb mixture evenly on top of each tomato, pressing down lightly to hold the bread crumbs in place. If using Parmesan Cheese, sprinkle a bit of grated Parmesan over the top.

5 Place the tomatoes into the hot oven and bake for 30 minutes or until the top is lightly browned and tomatoes are just tender, but still hold their shape.

6 Serve immediately.

Mark perishable ingredients

When ever you bring home a brand new spice, oil, vinegar, flour, sugar or other perishable ingredient, mark the bottle/container with the day’s date with a felt tip pen. Most "permanent markers" will write on just about any container.

That way if you don’t use it very much, but it’s been opened, you know how fresh it is. For an important meal don’t “submarine yourself” by using past expiration ingredients that have long lost their fresh taste and flavor.
