Orange and Fennel Vinaigrette

Orange and Fennel Vinaigrette is a refreshing salad dressing that's easy to make as well as healthy and oh! so fresh-tasting. It's a vinaigrette that you'll want to use often when your other dressings get boring and you want to add some spunk to your menu! Made with fresh orange juice, orange zest, a little crushed dried fennel seed, a tad of white wine vinegar and of course extra-virgin olive oil, it's sure to be a hit!

MAKES 6 SERVINGS.

Ingredients.

2-1/2 teaspoons Orange Zest
1/2 cup Orange jucie
1-1/4 teaspoons Dried fennel seed , crushed in a mortar and pestle
1 Tablespoons White wine vinegar
1/4 cup Extra-virgin Olive oil
Salt and pepper to taste


Preparation Directions.

1 Using a fresh orange, grate the orange zest using a box-grater.Set aside.

2 Squeeze the still-whole orange by cutting in two halves and squeezing. You may need to use an additional orange to make the volume you need. Set aside.

3 Using a mortar and pestle, crush the dried fennel seed into bits. Set aside.

4 In a glass measuring cup, add in the orange juice, the zest, the crushed fennel seed, the vinegar, the olive oil and the salt and pepper. Stir well to amalgamate.

5 Taste and correct seasoning to personal preference.

6 Pour over salads, seafood or greens and toss well.

Mark perishable ingredients

When ever you bring home a brand new spice, oil, vinegar, flour, sugar or other perishable ingredient, mark the bottle/container with the day’s date with a felt tip pen. Most "permanent markers" will write on just about any container.

That way if you don’t use it very much, but it’s been opened, you know how fresh it is. For an important meal don’t “submarine yourself” by using past expiration ingredients that have long lost their fresh taste and flavor.
