Anaheim Chili Salsa

Anaheim Chili Salsa is our version of a traditional Mexican Pacific Coast salsa for seafood. Our recipe uses mild Anaheim peppers, a Jalapeno or two for a little heat, garlic, olive oil lime juice, fresh oregano and a bit of green onions. Lightly pureed together it's a stunning sauce that not only treats the eye but the palate as well. 2 Lg. Anaheim Chili Peppers , cleaned, ribs removed and chopped
1/4 cup Extra-virgin Olive oil
1 to 2 jalapenos peppers , cleaned and chopped
1 med. clove garlic , chopped
2 Tablespoons Lime juice
1/4 cups Fresh Oregano leaves , loosely packed, chopped
1/4 cup Cilantro leaves , loosely packed, chopped
2 Tablespoons Green onion (all the white and some green) , chopped
1/8 teaspoons Salt or to taste

Preparation Directions.

1 Coarsely chop all ingredients and add to food processor. Blend to slightly chunky salsa.

2 Let marinate at room temperature for 30 minutes for all the flavors to blend then serve.

Serve with Fish Tacos Romantic Table Style and grilled seafood that you want to add a little kick to!
