Meatloaf Romantic Table Style

Meatloaf Romantic Table Style is one that I've been making many decades --in fact since my teens! It's a winner and not only a "manly-meal" but also a crowd-pleaser. It's a cook-pleaser too since this can be made in advance-in fact even tastes better when done ahead of time to allow the flavors to meld.

What makes this a little unusual and taste so flavorful is the fact that I like to use a combination of hand-ground beef stew meat and pork sausage. Then I add some sauteed onions and garlic with Parmesan, soft bread crumbs, oregano and sage and some lightly-cooked tomatoes. Extra Virgin Olive Oil
2-1/4 pounds Beef (Stew meat) , ground
2 pounds Pork Sausage
2 to 3 Large White Onions , chopped
4 to 5 cloves Garlic , peeled and chopped
1-1/4 cups Italian Parsley chopped
4 cups SOFT Bread crumbs (Use French or Italian bread)
3 cups Parmesan cheese , grated
1-1/2 teaspoons crushed Sage
1 teaspoons Dried Oregano
2 Eggs,, lightly beaten
1/2 teaspoons Poultry seasoning
2 16 ounce cans Reduced Sodium Whole Tomatoes , chopped
Salt and Black pepper to taste
1/3 cup Dry Bread crumbs ,
Extra Parmesan cheese for topping , grated
Butter for dotting tops
2 Loaf pans

Preparation Directions.

1 Preheat oven at 350 degrees. Have middle grate set for holding the loaf pans.

2 Oil with olive oil each loaf pan.

3 Over medium-low heat in a large non-stick skillet, add 3-4 tablespoons of Olive oil and heat well, then saute onions until softened. Add garlic and saute until fragrant, Remove from heat.

4 Mix all ingredients together except 1 can of canned tomatoes, dry bread crumbs and butter.

5 Mix well to distribute all ingredients throughout meat mixture. Take a small piece of mixture and fry in small pan and test for seasonings thus far.

6 Correct seasonings to personal taste allowing for the remaining missing ingredients to be added prior to baking.

7 Place meat mixture in each OILED loaf pan. Take a spatula and with blade, run along all sides of pans to make canal for canned tomatoes.

8 Carefully along all the sides of the meatloaf, spoon or pour the chopped tomatoes and juice to fill-in around the meat. You may not use all of the chopped tomatoes.

9 Sprinkle the tops of the meatloaf with dry breadcrumbs. Dot the tops of meatloaf with sticks of cold butter.

10 Place in oven at 350 degrees and bake for two hours or until meat thermometer says done. If meatloaf tops get too brown, cover loosely with aluminum foil for rest of baking.

Wine and Food Pairing and Serving Suggestions.

Serve with a hearty red wine such a Sangiovese or Zinfandel.

Beware cooking wine!

Never use a "so-called cooking wine" that's marketed specifically as a cooking wine for your sauce. Only use a wine that would not be objectionable to drink by itself. In lighter sauces a good one to use is a nice Fume' Blanc or Sauvignon Blanc. In stronger red sauces, use a decent red wine such as a Barolo, Zinfandel or Cabernet.
