Christmas Pear and Pomegranate Salad
Christmas Pear and Pomegranate Salad is one that's perfect for Christmas and New Years dinners-or anytime when red D'Anjou pears and pomegranates are in season-with its colorful red and green ingredients.This is quite an eye-appealing salad! And oh so easy to put together!
Using our Pomegranate Vinaigrette
, you put a sliced Star Crimson Pear (or Red D'Anjou pear) on a bed of Arugula and Radicchio, topped with a few chunks of Blue Stilton cheese, pomegranate vinaigrette and pomegranate seeds. Oh so good!
Preparation time: 30 minutesCooking time:
3/4 cup Pomegranate Vinaigrette
1 large Pomegranate , cleaned and seeded. Save seeds.
5 ounces Arugula leaves ,washed and blotted with paper towel
4 Large leaves of Radicchio , rinsed and blotted dry
4 Red D'Anjou pears , washed and sliced length-wise into fanned-out sections
1/4 pounds Blue Stilton cheese , cut into bite-sized chuncks
1 On each salad plate, arrange a generous handful of cleaned Arugula next to a large leaf of Radicchio (As pictured.)
2 Carefully arrange each sliced pear, separating the slices fan-like. (As pictured.)
3 Spoon a few teaspoonfuls of Pomegranate Vinaigrette over the pear and, arugula and radicchio leaves.
4 Sprinkle each salad with some of the pomegranate seeds.
5 Dot each salad with bite-sized chunks of the Blue Stilton cheese.
6 Serve and enjoy!
This salad goes well with a light Grenache wine.
