Rigatoni with Chicken, Broccolini and Yam

Rigatoni with Chicken Broccolini and Yam, features one of my all-time favorite combinations -Poultry and Yams. They go together so well and the combination is so delicious, but usually most people just think "turkey and yams" as in the winter holidays. So why not try this combination: Rigatoni with Chicken, Broccolini and Yams! It's not only very affordable to make but oh so deliciously comforting! And you can enjoy it year-round!

When I first made this recipe, a few minutes into sauteing the dusted chicken pieces in olive oil I knew this was going to be a "keeper"- It smelled so good! I had already parboiled a yam, skinned and cubed it as well as steamed the broccolini and the aromas were combining just wonderfully! Preparation time: 30 minutes
Cooking time: 25 minutes

1 pound Chicken thighs , boned (optional skin left on) cubed, floured and salt and peppered.
1/4 cup flour
1/2 pound Broccolini , trimmed, steamed until a nice crunch when bitten
2 cups Yam that's been blanched ten minutes rinsed, peeled and cubed
2 Tablespoons Extra-virgin Olive oil
1 small White onion , peeled and sliced
2 cloves Garlic , peeled and sliced
1 cup White wine
1 cup Chicken broth
Salt and pepper to taste
6 ounces Rigatoni

Preparation Directions.

1 Parboil the yam(s) for 10 minutes. Drain and rinse in cold water. When easy to touch, peeled and cube the yams into half-inch cubes.

2 Fill a large pasta/steamer pot full of hot water and bring to a boil. In the pot's steamer basket, place the broccolini and steam for 4-5 minutes or until just tender to the bite. When the the broccolini is done,rinse off with cold water to stop the cooking process and set aside for later. Save the hot water to cook the pasta..

3 Heat olive oil in a large stockpot, add chicken pieces and brown. Saute until lightly brown (about 5 minutes.) Remove from pan and set aside.

4 Add onion and extra olive oil (if needed) to pan and saute until slightly translucent and golden. Then add in the sliced garlic and cubed yams and saute another 5 minutes or until yams are slightly tender.

5 Add the white wine and reduce down. Add the chicken broth, stir and and simmer for ten minutes covered until the yam is fully cooked but al dente.

6 In the meantime bring the pasta pot full of hot water back up to boiling. Add a tablespoon of salt, stir and add in the pasta. Cook as directed on pasta package.

7 Add in the broccolini and chicken and heat at a low simmer for a couple minutes just to warm up.

8 When the pasta is al dente, drain it, then toss the pasta with the broccolini-chicken and yam mixture. Taste and correct seasonings to personal preference.

9 Serve on individual dinner plates and enjoy!

Wine and Food Pairing and Serving Suggestions.

This combination is very mild and not herbaceous so it will go well with a fragrant Rhone style wine like a Vigonier.

Cooking with onions and garlic

When your recipe calls for both sauted onions and garlic, saute the onions first - they take longer to soften. Then when the onions are almost softened, add the garlic.The garlic doesn't need very long to become fragrant - and you don't want to burn your garlic and turn it bitter!
