Country Style Potato and Cheese Torte

Country Style Potato and Cheese Torta is a delicious country-style potato recipe that absolutely melts in your mouth. It's so easy to throw together -especially if you do all the slicing with a mandoline!

You butter a baking dish, thinly slice a white onion and a couple russet potatoes. Then you spread the onion strands on each layer, then arrange the thin-layers of potatoes over-lapping each other in layers around the dish, sprinkling each layer with a little Gruyere cheese, salt and pepper. Just before baking, you lightly pour a cup or so of chicken broth (to add moisture) around the torte. Then bake at 375 for 80-90 minutes. What a heavenly flavorful peasant-style dish to take to barbecues and picnics for all to enjoy! It's been known to steal the show!

Ingredients.

2 Tablespoons Unsalted butter plus enough to grease the pan and for dotting top
2 to 3 Potatoes,, peeled and sliced into 2mm round slices
4 ounces Gruyere Cheese , shredded
1 small White onion , peeled and very thinly sliced (2mm)
2 cups Chicken broth
Salt and Pepper to taste

Optional
1/2 cup Parmesan Cheese , grated for top


Preparation Directions.

1 Smear the bottom and insides of a deep dish pie pan or larger baking dish with one tablespoon of butter.

2 Wash and scrub the potatoes. You can leave the skins on or peel them for most show.

3 Slice the potatoes very thinly (2 mm). Save nicest-looking slice rounds for final top layer.

4 Start layering the potato slices from the outside of the pan around. Overlap the sliced potatoes. if your slices are 2 mm, you will have several layers of potatoes. Sprinkle salt and pepper on each layer as you complete each layer, topping each layer with finely sliced onions. Then sprinkle some of the grated Gruyere cheese on top, followed by little pieces of butter.

5 When you've done your top layer of potato slices, then onions, salt and pepper, sprinkle with Gruyere cheese and if using the Parmesan cheese, then dot with butter. Then pour the chicken broth around the sides of the dish (it may look a little soupy, but the liquid will be all absorbed when done).

6 Bake in a preheated oven at 375 degrees for about 1 1/3- 1 1/2 hours. Check the baking process at quarter-hour intervals.

7 Cook until lightly browned on potato edges. (See photo.)

8 When desired doneness, remove from oven and let sit five minutes or so and serve.

This version of potatoes complements almost any style of grilled or sauteed seafood. It also goes well with pork or chicken or even sandwiches.

No cheese on seafood please!

When serving an Italian seafood dish, unless the recipe specifically calls for cheese, grated Parmesan cheese on top is not a good idea!

The pungent taste of Parmesan is usually too strong for the delicate fish flavors.
