Apple Risotto Romantic Table Style

Apple Risotto Romantic Table Style, is a risotto style rice pudding that I wanted to create for a few years. For YEARS I've been telling my friends and family how one of these days I'm going to create a dessert risotto! But I never did --until now!

But months of hot weather pretty much killed any desire I had for spending an extra amount of time at the stove. Now that it's so much cooler, I was excited to try the new recipe that's been "rolling around in my head" as soon as the quality of the apples and weather permitted.

Now that it's officially Fall, decent-tasting apples are starting to show in the markets. For this recipe, I recommend using a golden Golden Delicious apple or Gala. Do not use the "Golden Delicious" that are more the color of Granny Smiths (Ugh!) And definitely stay away from Granny Smith apples! (They're only good for throwing AT people!) You need a much more mellow variety apple than that!

What's neat--and healthy about this risotto is that instead of using broth for the liquid, you use milk--thus also making this an anti-osteoporosis-fighter! It's up to you what version of milk to use. If you want the risotto extra-creamy, use whole milk. If fewer calories are a big concern for you, use two-percent or nonfat.

The main ingredients, aside from the risotto itself and milk, are caramelized apples, ground cinnamon, chopped walnuts, black raisins --some of Fall's best natural products and of course a little raw sugar and vanilla extract. It's not only great served warm, but also cold from the frig! I've been eating a little bit of it everyday for lunch-time dessert.

This dessert risotto would also make a knock-out brunch entree as well! I have found that it's quite a "pick-me-up"-especially with a good cup of coffee! A few fork-fulls of this gets you ready to conquer the rest of the day! And remember, eating this risotto not only fortifies you with healthy anti-osteoporosis and antioxidant ingredients, it also boosts your energy levels up a notch!

5 Gala or Golden Delicious Apples , cored and cut into small cubes
1/2 to 1 teaspoons Ground Cinnamon
4 to 6 Tablespoons Unsalted butter
1/3 to 1/2 Cup Walnuts , coarsely chopped
1/3 to 1/2 Cup Black raisins
1 Cup Risotto rice
6 Cups Milk , heated in separate saucepan
1/4 Cup Raw or Turbinado sugar
1 teaspoons Vanilla extract

Preparation Directions.

1 In a non-stick frying pan, over medium-low heat, saute 2-4 tablespoons of the butter, apples and cinnamon together, stirring frequently until the apples are softened and caramelized. Remove apples to a separate plate and set aside for later.

2 Add the walnuts to the frying pan and lightly toast for a few minutes. Remove walnuts and set aside with cooked apples.

3 Add raisins to frying pan and lightly saute to warm-up and pick-up whatever residue is left from the butter and walnuts. Remove raisins and set aside.

4 Add 2 tablespoons of the remaining butter to a large saucepan and melt over medium-low heat. Add the risotto and stir well with a wooden-handled spoon. Stir until rice gets opaque-white. Add 1 cup of hot milk. Stir until well absorbed. (Set a timer for 18 minutes. This will give you a rough guide when the risotto is almost done.)

5 Add in the the vanilla extract and raisins and stir. Continue to add a ladle of milk at a time and stir the rice until absorbed. Continue to add in hot milk, a ladle at a time until rice is almost tender. (About 18 minutes from time after the first ladle of milk.)

6 Add in the walnuts, raw sugar and cooked apple pieces. Stir well.

7 Cook for another 5 minutes or so, adding hot milk if needed, being sure to scrape up from the pan's edges and bottom, folding the mixture back into the fold.

8 Just before finishing, briskly stir the rice mixture. This will give the "rice pudding" an extra-smoothness."

9 Remove from heat, cover and let sit a minute or two, and then serve. ---Get ready for pure dessert heaven!

Make your salt and pepper your "right -hand" aid

An easy tool to have handy at all times in your kitchen is your customized combined salt and pepper shaker. Buy a clear plastic shaker with a handle on it. Make yourself a "customized salt and pepper combo or "house blend." Ours is three parts ground pepper to one part salt. Having one of these handy really cuts the prep time down when doing breading and preliminary cooking!
