Mixed Greens and Pear Salad

This is a light refreshing unusual salad that can be a cooling appetizer or salad for all types of summer dishes and barbecues from grilled seafood to light pasta dishes.

1/2 cup squeezed fresh orange juice
1/2 cup Extra-virgin olive oil
2 to 3 Tablespoons White wine vinegar
1 teaspoons Dried Basil , crushed in mortar and pestle
1/8 teaspoons salt
4 halved pears in heavy syrup , chilled and drained
1 pkg. Spring Mix mixed greens

Gorgonzola cheese , cut in small wedges

Preparation Directions.

1 Squeeze orange juice and add to a glass measuring cup.

2 Add in scant half- cup Extra-virgin olive oil. Stir. Add in 2 tablespoons of white wine vinegar.

3 Add in basil and touch of salt. Taste and correct seasoning, orange juice, white wine vinegar and olive oil. If the oranges don't have enough tang, you might need to add a little more white wine vinegar to give it a little tartness.

4 Arrange mixed greens on small plate. Place one pear thatís been partially sliced lengthwise into sections on each plate.

5 Cut a slice of cheese for each plate, placing adjacent to pear. Stir vinaigrette and dribble it over salad. Serve as shown in photo.

Frying high fat meats

You can cut down on the calories of high-fat meats, by just adding a little water (instead of adding oil) to your frying pan until the meat's fat starts releasing and lubricating the pan, then cook with the frying pan covered. If you want a crispy coating, you uncover the pan or cook with the lid partially ajar.
